Bacon Beer Cheese Dip

Ingredients
- 6 bacon slices
- 2 tbsp butter
- ¼ cup flour
- 1 cup cream
- 1 cup beer
- 1 tbsp Dijon mustard
- ½ tsp smoked paprika
- 2 cup grated cheddar cheese
- Scallions
Directions
Cook bacon slices in a saucepan; remove and leave the drippings. Melt two tablespoons of butter with the drippings. Add ¼ cup of flour, cook over medium heat, and stir for two minutes. Add one cup each of cream and beer, one tablespoon of dijon mustard, and ½ a teaspoon of smoked paprika. Simmer for five minutes. Stir in two cups of grated cheddar until melted. Top with scallions and bacon pieces before serving.
Every time I make this recipe, it turns out slightly different. I’ve been playing around with different types of beer; so far I’ve used Guinness and Blue Moon. Unless you are a fan of the thick bitterness that is Guinness, I would advise against using it. As far as what to dip in this cheesy beer bacon goodness? I’d suggest soft pretzels, possibly even a sourdough or pumpernickel bread. Good luck and enjoy!
