- 1 tbsp unsalted butter
- 1 onion, chopped
- 1 8 oz. piece deli ham, diced
- ½ tsp chopped fresh thyme
- 1/2 cup low sodium chicken broth
- 1 17.5 oz. package potato gnocchi
- 1 cup frozen peas, thawed
- ¼ cup heavy cream
- 1 cup shredded swiss or gruyere cheese
- Kosher salt and freshly ground pepper, to taste
Preheat the broiler to high heat. Melt the butter in a large ovenproof skillet over medium heat. Add onion and cook until softened, about 3 minutes. Add ham and thyme, continue to cook until ham is lightly browned. Add chicken broth and ¾ cup water and bring to a simmer. Add gnocchi, stir well, cover and cook until gnocchi is slightly tender, about 5 minutes. Remove from heat. Stir in peas, heavy cream, ¼ tsp, salt and pepper. Sprinkle the cheese over the top. Broil until golden and bubbly, about 3 minutes.

I know many people who have issues with peas; don’t shy away from this recipe just because it contains those little green things you will forever push around on your plate! I am not a fan of peas myself, but love this recipe anyway. It is extremely easy and quick to make. It’s very important to use unsalted as opposed to salted butter and low sodium chicken broth as opposed to regular because this recipe can get very salty in a big hurry. Having an ovenproof skillet is not imperative; I don’t have one and just improvise. Good luck and enjoy!
